This quick and easy Bread and Butter Pudding is so good! It’s perfect for Easter, with all the right flavor notes of apple, cinnamon, vanilla & a sugary syrup. I’ve never been a fan of Bread & Butter Pudding until I developed this recipe, and my family love it too! It takes 10 minutes to prep, and the oven does the rest, perfect for a busy Easter weekend schedule!

Easter Bread and Butter Pudding

Prep Time: 10 minutes

Oven Temp: 170˚ Celsius or 340 ˚ Fahrenheit

Yield: 27cm x 27cm Pyrex Dish

Ingredients:

BASE INGREDIENTS:
6 hot cross buns (both halves buttered)
400ml milk
385g tin condensed milk
3 eggs
¼ cup castor sugar
1 Tbsp. vanilla essence


APPLE TOPPING:
3 apples
(royal gala or pink lady)
1 tsp. water
1 Tbsp. castor sugar
½ tsp cinnamon

1 Tbsp. syrup

Method (base ingredients):

Preheat your oven to 170˚ Celsius or 340 ˚ Fahrenheit.

Grease a 27cm x 27cm Pyrex dish with butter.

Slice the hot cross buns in half and butter each half generously.

Roughly break the hot cross buns into chunks (dividing each half into 4 or 5), and line the bottom of the dish with them.

Place the milk and condensed milk into a pot, give it a stir, and place on a medium heat, on a stovetop, heating just until it begins to simmer.

In the meantime, place the eggs, castor sugar, and vanilla essence in a separate mixing bowl, and whisk until they combine.

Once the milk and condensed milk have heated, remove from the stove, and slowly pour the egg mixture into it, whisking as you pour.

Pour the mixture over the hot cross buns, coating entirely. Set aside to soak for 5 minutes while you prep the apple topping.


Method (apple topping):

Peal the apples, and cut into chunks of about 2cm thick.

Transfer them into a microwave safe dish, and add the water, castor sugar and cinnamon, and microwave on high for 3 minutes.

While they are hot, pour over the syrup, tossing to spread.

Remove the apples (reserving the sauce) and place them into the hot cross bun mixture, pressing down to cover slightly with the egg mixture. The sauce can be pour over the ice-cream when served with this dish to bump up the cinnamon flavor!

Place the dish on the middle shelf in the oven, and bake for 50 – 55 minutes.

Serve warm with vanilla ice-cream or custard. Enjoy!
