Monster Rice Krispies Treats Recipe

Prep Time: 10 minutes
Yield: Six 8cm x 6cm Monsters @ 40g each
Ingredients:
2 Tbsp. butter
150g packet white/pink marshmallows
3 cups Rice Krispies
White Baking Chocolate (for dipping)
Fondant Eyes or Smarties (draw the pupil with an edible pen)
6 Ice-Cream Sticks
Method:
On a medium to low heat on your stovetop, melt the butter in a heavy based pot.
Add the marshmallows and stir until they have melted and combined with the butter.
Add the Rice Krispies, and give it a stir to combine. It will be quite sticky, but keep stirring!
Remove the pot from the heat, and allow to cool enough to handle with your hands.
Now to shape the Monsters…
To shape each monster, draw a 8cm x 6cm rectangle template on some baking paper to use as your guide.
Grab big handfuls (roughly 40 grams) of mixture and squish into a rough rectangle shape.
Push the ice-cream stick into one end, and then place it down onto your template, and continue to squish it into shape.
Place in the freezer to get cold for a few minutes.
In the meantime, melt some white baking chocolate. Once your monsters are cold, dip the top third into the baking chocolate. Set on a dripping rack, and place back into the freezer for 2 minutes to set.
Then give a second coating of chocolate, and add the eyes onto it while its still wet.
Allow to set, and then enjoy with your kids!
