Pancakes (as we call them in South Africa) or French Crêpes are great. But in truth, if you don’t have a good recipe, your flippin’ will be pointless. I’ve tried dozens of recipes, but this recipe (that I recently developed) comes out tops, and really is the best pancake recipe ever! From the first drizzle of batter that hits the pan, to the last, they cook perfectly and taste scrumptious.

Best Pancake Recipe Ever!!!

Prep Time: 15 – 25 minutes
Yield: 12 large pancakes or 25 mini pancakes
Ingredients:
2 eggs
2 Tbsp white sugar
1 cup milk
⅓ cup water
1 Tbsp butter
pinch salt
1 cup flour
Method:
Using an electric mixer, beat the eggs until fluffy, and add the sugar and beat for a further 30 seconds until combined.
Add the milk, water and butter, and beat until the ingredients combine. There may be some butter bits in the mixture, that’s absolutely perfect and how it should be. The butter really aids in the cooking, and keeps them lovely and moist!
Next, sieve in the dry ingredients, flour and salt, and beat until combined. The mixture should be runny, and not thick. There is no need to add any extra flour!
Cooking Instructions:
Heat your stove to medium-high, and place a blob of butter in a pan and allow it to melt.
Using some kitchen towel or tissue paper, soak up the butter (keeping the towel to recoat the pan between making pancakes).
Pour small amounts of batter into your pan, swirling it around to coat the base, allow it to bubble slightly, and then flip it over, browning the other side.
Continue until your batter is done, remembering to wipe down the pan with the buttered kitchen towel before pouring each new pancake.
Enjoy with my Salted Caramel Sauce recipe, ice-cream, caramel, fruits, cream, peanut butter, nuts… well, anything you like really!
