Ingredients:
- 250 grams Dates Chopped
- 1 cup Sugar White
- 125 grams Baking Margarine or Butter
- 4 cups Rice Krispies
- 125 grams Desiccated Coconut
Method:
Place the chopped dates, sugar and margarine or butter in a medium sized pot. Bring to the boil on a medium/high heat, stirring frequently.
Boil until the mixture becomes smooth and the ingredients have combined well.
Remove from the stove and allow to cool for about 5 minutes.
Add the Rice Krispies and stir with a wooden spoon until combined.
Roll into small balls of roughly 10g each. I like to squish them into balls (kind of like squishing a stress ball about 10 - 15 times) and then rolling them. This helps in keeping their shape.
To finish them off, coat with coconut by rolling the balls in it.
