To me, Dates always add such a rich, natural sweetness to any recipe. And this yummy Date Balls recipe is my absolute undoing. Once I start on them, I just can’t stop… they are soooo good! My mom always makes these for us when we go to her and my dad on holiday. Perhaps somewhere in my subconscious they’ve become my comfort food, especially when I haven’t seen my folks for long periods of time and I’m missing them. Yummy Date Balls Recipe

Total Time: 25 minutes
Yield: +/- 60 balls
Ingredients:
250g dates (chopped)
1 cup sugar
125g baking margarine
4 cups Rice Krispies
125g packet desiccated coconut
Method:
Place the chopped dates, sugar and margarine in a medium sized pot. Bring to the boil on a medium/high heat, stirring frequently.
Boil until the mixture becomes smooth and the ingredients have combined well.
Remove from the stove and allow to cool for about 5 minutes.
Add the Rice Krispies and stir with a wooden spoon until combined.
Roll into small balls of roughly 10g each. I like to squish them into balls (kind of like squishing a stress ball about 10 – 15 times) and then rolling them. This helps in keeping their shape.
To finish them off, coat with coconut by rolling the balls in it.
These date balls are the perfect treat, any time of day. Enjoy!
