Servings 1 27.5cm x 37cm tray of crunchies

Equipment

  • 1 27,5cm x 37cm baking tray

Ingredients

Ingredients (for the crunchies):

  • 275 grams butter
  • cups Rolled Oats
  • cups Desiccated Coconut
  • cups Cake Flour
  • ¾ cup Sugar Brown
  • 2 Tbsp. Syrup Golden
  • 3 Tbsp. Cocoa Powder
  • pinch Salt
  • tsp Baking Powder
  • 80 grams Chopped Nuts (your choice)
  • 80 grams Chopped Chocolate (milk or dark)

Ingredients (for the icing):

  • 300 grams Icing Sugar/Confectioners Sugar
  • 2 Tbsp. Butter
  • 3-4 Tbsp. Cocoa Powder
  • 60 ml's Boiling Water

Instructions

Method For The Crunchies:

  • On a stovetop, melt the butter in a large pot on a medium to high heat.
  • Once melted, remove from the heat and add the oats, coconut, sugar, syrup, cocoa powder, chopped nuts, and chopped chocolate. Then sift in the salt, flour, and baking powder.
  • Using a wooden spoon (or your hands if you don't mind getting them a little dirty), mix the ingredients until they are completely combined, and the color is even throughout.
  • Place parchment paper in your baking tray, and grease the top of the paper with some butter.
  • Empty the mixture into your baking tray, and flatten it down with a spoon or spatula, ensuring it's evenly spread (you can apply a fair amount of pressure to make it knit nicely together).
  • Place the tray in the center of your oven, and bake at 180° C or 360° F for 20 minutes (until just golden on top).

Method For The Icing:

  • While the crunchies are baking, prep your icing.
  • Add the butter (softened and room temperature) to the icing sugar, lightly combining. Add the cocoa powder, give it a stir, and then add the boiling water. Stir until completely combined and smooth.

Remove Crunchies From Oven...

  • Once the crunchies are baked, allow to cool for 3 to 5 minutes, and then (while they are warm) pour over the icing, and levelling and smoothing it off. Sprinkle with some desiccated coconut, chocolate shavings or crushed nuts.
  • Once completely cooled, and the icing has set, cut into 3cm x cm squares. Enjoy!
