Crunchies (a slang South African term) or Oatmeal Cookies are sooooo yummy! I grew up on these, they were always my favorite childhood snack. This recipe is an adaption of one of the recipe’s my mom baked when I was young. I have completely overhauled the recipe, making it my own, with lots of additions and omissions. Prep Time: 10 minutes
Baking Time: 20 minutes
Oven Temp: 180° C or 360° F
Yield: 1 27,5cm x 37cm baking tray
Ingredients:
275g butter (or margarine for a cheaper variation)
1½ cups rolled oats
1½ cups desiccated coconut
1½ cups cake flour
¾ cups brown sugar
2 Tbsp syrup
3 Tbsp cocoa powder
pinch salt
1½ tsp baking powder
80g chopped nuts (of your choice)
80g chopped chocolate (milk or dark)
Method:
On a stovetop, melt the butter in a large pot on a medium to high heat.
Once melted, remove from the heat and add the oats, coconut, sugar, syrup, cocoa powder, chopped nuts, and chopped chocolate. Then sift in the salt, flour, and baking powder.
Using a wooden spoon (or your hands if you don’t mind getting them a little dirty), mix the ingredients until they are completely combined, and the color is even throughout.
Place parchment paper in your baking tray, and grease the top of the paper with some butter.
Empty the mixture into your baking tray, and flatten it down with a spoon or spatula, ensuring it’s evenly spread (you can apply a fair amount of pressure to make it knit nicely together).
Place the tray in the center of your oven, and bake at 180° C or 360° F for 20 minutes (until just golden on top).
Icing Recipe – for this yummy chocolate crunchies recipe
300g icing sugar/confectioners sugar
2 Tbsp butter
3-4 Tbsp cocoa powder
60ml boiling water
While the crunchies are baking, prep your icing.
Add the butter (softened and room temperature) to the icing sugar, lightly combining. Add the cocoa powder, give it a stir, and then add the boiling water. Stir until completely combined and smooth.
Remove Crunchies From Oven…
Once the crunchies are baked, allow to cool for 3 to 5 minutes, and then (while they are warm) pour over the icing, and levelling and smoothing it off. Sprinkle with some desiccated coconut, chocolate shavings or crushed nuts.
Once completely cooled, and the icing has set, cut into 3cm x cm squares.
