Chocolate Date Snowballs Recipe

Total Time: 25 – 35 minutes
Yield: +/- 30 balls
Ingredients:
125g dates (chopped)
½ cup sugar
65g baking margarine
75g tub of cherries (chopped)
2 cups Rice Krispies
200g white baking chocolate (to coat)
125g packet desiccated coconut
Method:
Place the chopped dates, sugar and margarine in a medium sized pot. Bring to the boil on a medium/high heat, stirring frequently.
Boil until the mixture becomes smooth and the ingredients have combined well.
Remove from the stove and allow to cool for about 5 minutes.
Add the chopped cherries and Rice Krispies and stir with a wooden spoon until combined.
Roll into small balls of roughly 6g each. I like to squish them into balls (kind of like squishing a stress ball about 10 – 15 times) and then rolling them. This helps in keeping their shape.
To finish them off, coat with melted white chocolate and then immediately roll in coconut.
Place on baking paper and allow the chocolate to set and dry.

- 2 cups Rice Krispies
- 75 grams Glace Cherries Chopped
- 200 grams White Chocolate Melted
- 125 grams Desiccated Coconut For Coating

- Boil until the mixture becomes smooth and the ingredients have combined well.
- Remove from the stove and allow to cool for about 5 minutes.
- Add the chopped cherries and Rice Krispies and stir with a wooden spoon until combined.
- Roll into small balls of roughly 10g each. I like to squish them into balls (kind of like squishing a stress ball about 10 – 15 times) and then rolling them. This helps in keeping their shape.
- To finish them off, coat with melted white chocolate by rolling the balls in it (using a teaspoon) and immediately roll in coconut to coat, and place them on some parchment paper to dry & set.
