This easy & yummy Custard Slice recipe transports me back to my teen years. I always made Custard Slices, and then through the years, I somehow managed to misplace my go-to recipe. I’ve tried many recipes, and they never match up to my expectations. So this year, I decided to develop my own recipe that’s easy to make, with all the right flavor notes & textures.
This recipe makes 8 custard slices, perfect for a hot Summers day, shared with family & friends!

Prep Time: 10 minutes
Baking Time: 30-40 minutes
Cooling Time: 2-3 hours
Oven Temp: 200° C or 400° F
Yield: 23cm X 23cm square pan (8 custard slices)
Ingredients:
FOR THE CUSTARD SLICES:
1 roll of puff pastry (+egg for egg wash)
1 Litre milk
1 Tbsp. butter
90ml (6 Tbsp.) custard powder
2 eggs
1 tin condensed milk (385g)
FOR THE ICING:
½ cup icing/confectioners sugar
1 Tbsp. warm water
Method:
TO MAKE THE PUFF PASTRY
Prepare the puff pastry by rolling it out and cutting it to the size of your dish. Try to handle it as little as possible, as this will influence your rise. You can work on a floured surface, or if you prefer, you can place it directly onto a baking sheet that’s lined with baking paper and greased. Give it an egg wash with some beaten egg, and place it in a preheated oven at 200° C or 400° F, and bake for 30 – 40 minutes until golden brown on top.
When the puff pastry is baked, allow it to cool, and then separate it into two equal halves by gently running a knife through the middle of the layers. Place one half of the puff pastry into the dish, top side facing down. The other half will be placed on top once the custard filling is made.
TO MAKE THE CUSTARD FILLING
Place the milk (reserving about a ¼ cup of milk to mix the custard powder in – see below) and butter in a sauce pan, on a stove top on a medium heat.
While the milk is coming to the boil, mix the custard powder into the reserved ¼ cup of milk, stirring with a fork until it is lump free, and set aside.
In a mixing bowl, beat the eggs until they are fluffy. Then add the custard powder and milk mix, and the condensed milk, and give a quick beat to combine.
When the milk on the stovetop begins to boil, add the egg, custard & condensed milk mixture to it, while stirring, and continue to stir until it gets thick (roughly 3 minutes).
Pour the custard into the dish lined with the puff pastry, and top with the other half, top side facing up.
Place in the fridge to get cold. After about an hour, you can mix the icing for the top.
TO MAKE THE ICING
Place the icing sugar and warm water in a bowl, and mix with a fork until it’s silky and smooth. Transfer it into a zippy bag, snip one end off, and pipe lines across the top of the custard slices.
Return them to the fridge to finish setting (roughly 1-2 hours).
Once set, slice into 8 custard slices… enjoy!
