This easy Apple Pie recipe is a classic. It’s moist and soft, with gentle flavors of apple and honey. It doesn’t have a hard pie crust like a traditional apple pie, but rather a soft cake-like casing, jam-packed with pie apples in the middle. It’s a lovely take on an old favorite, and it’s really easy to bake.

This recipe makes two apple pies. They freeze perfectly for up to six months, and you’ll always have a dessert on hand for any impromptu get-together, now that’s smart!

Easy Apple Pie Recipe

Prep Time: 10-15 minutes

Baking Time: 40-45 minutes

Oven Temp: 160° C or 320° F

Yield: Two 20cm X 20cm Pyrex dishes

Ingredients:

FOR THE PIES:
2 eggs
230g margarine (Stork or Crisco)

1¼ cups white sugar
2 cups self-raising flour
cups milk
2 tsp vanilla essence
FOR THE FILLING:

a tin of pie apples (765g)
¼ cup white sugar
FOR THE GLAZE:

2 Tbsp. butter
2 Tbsp. honey

Method:

FOR THE PIES

Beat the eggs with an electric mixer until they become fluffy (roughly 45 seconds). Set aside.

In a separate mixing bowl, add the sugar and butter (room temperature) and cream well (roughly 45 seconds to a minute) .

While continuing to beat, slowly add the beaten eggs, and continue mixing until incorporated.

Sift in the self raising flour and add the milk, one third of each at a time, slowly mixing between each addition.

Scrape down the sides of the mixing bowl, add the vanilla essence, and give one last beat to incorporate.

FOR THE FILLING

To prepare the pie apples, drain the liquid from the tin, and place them into a dish. Sprinkle with sugar, and mash them down until there aren’t any big pieces of apple.

ASSEMBLE & BAKE THIS EASY APPLE PIE RECIPE

To assemble the pies, grease your Pyrex dishes with butter, and place 285g of the mixture in each Pyrex dish. Spread it evenly over the bottom and the sides of the dish.

Place half the mashed pie apples in each dish, spreading evenly.

Then place half the remaining mixture over the top of each pie, spreading to cover.

Place the pies in the center of your oven, and bake at 160° C or 320° F for 40 – 45 minutes (until golden on top).

FOR THE GLAZE

About five minute before the pies are due to come out the oven, place the butter and honey in a saucepan, on a stovetop, on a medium heat, and stir until combined and it begins to simmer.

When your pies come out the oven, spread half the glaze over each apple pie.

Serve warm with some whipped cream or ice-cream… enjoy!
