Berry Cheesecake Pavlova Recipe

Prep Time: 15-20 minutes
Bake Time: 1 hour
Oven Temp: 150˚C or 300˚F
Yield: 20cm X 30cm Pavlova
Ingredients:
FOR THE BASE:
4 egg whites
a pinch of salt
1 cup castor sugar
1 Tbsp. cornflour or Mazina
1 tsp white spirit vinegar
FOR THE CHEESECAKE:
230g cream cheese
300g condensed milk
⅓ cup lemon juice
FOR THE TOPPING:
400g fresh strawberries
200g fresh blueberries
40g cashew nut brittle (or any brittle you prefer)
Method (for the meringue base):
Place the egg whites in a mixing bowl, and beat on a low speed until they just begin to become fluffy.
Add the salt, increase the beating speed to high, and continue to beat until stiff peak stage.
Add the castor sugar, a spoonful at a time, while continuing to beat until silky and shiny.
Add the cornflour/Mazina and the white spirit vinegar, and beat until combined.
Prepare a baking sheet with some parchment paper, and pipe a 30cm by 20cm border, and fil the middle with the remaining meringue (ensuring the sides are elevated).
Place in a pre-heated oven (150˚C or 300˚F) on the middle shelf and bake for 60 minutes. Once baked, turn the oven off, leave the oven door ajar, and let the meringue rest for a few hours until it’s completely cooled. Once cooled, remove it from the parchment paper.
Method (for the cheesecake):
In the meantime, place the cream cheese into a mixing bowl and beat until smooth and creamy.
Add the condensed milk, and beat until combined.
Add the lemon juice, and beat until well incorporated.
Place in the fridge to keep cool.
Method (for the topping):
Once the meringue base is cooled. Place the cheesecake into it, and top with the strawberries (cut into quarters), the blueberries, and the crushed nut brittle.
