The Best Banana Bread In 10 Minutes

Oven Temp: 160˚ C or 320˚ F
Yield: 3 (21cm x 11cm) Loaf Tins
Ingredients:
150g butter
1 ½ cups brown sugar
5 ripe bananas (roughly 670g mashed)
3 eggs
⅓ cup double thick plain yogurt
2 cups flour
½ tsp salt
1 ½ tsp baking soda/bicarb
1 ½ tsp baking powder
*OPTIONAL TOPPINGS:
crushed nuts or nut brittle
10 blocks melted chocolate, 1 Tbsp. each of cocoa, butter & sugar
crushed caramel flavored biscuits (like Bakers Nuttikrust)
Method:
Prep 3 (21cm x 11cm) loaf tins by greasing them with butter and lining with baking paper.
Heat your oven to 160˚ C or 320˚ F.
Place the bananas in a flat bottomed dish, and mash them until there aren’t any big bit left. Their mashed weight should be roughly 670g. Set them aside.
Place the butter in a mixing bowl and beat until smooth.
Add the the sugar, and continue to beat until creamed.
Add the eggs and slowly beat them into the creamed butter and sugar until they’ve combined. You can scrape down the sides of the mixing bowl if the butter has accumulated there, and give it a quick beat again.
Add the *double thick plain yogurt and the mashed bananas, and beat until incorporated.
*You can substitute the yogurt with water (if you prefer), and increase the butter by 30g to compensate for the change.
Sift in the dry ingredients, starting with the flour, and the salt, and give a slow beat to combine.
Lastly, add the baking soda and baking powder, and give a last slow beat.
Transfer the batter equally into the loaf tins, roughly 570g each.
*Optional Toppings To Make The Best Banana Bread Even Better:
*Crush nuts or nut brittle (of your choice) into small bits, and sprinkle over the top of the loaf. Alternatively, you can stir the nuts into the batter if you prefer.
* Melt 10 blocks of chocolate in a microwave. Add 1 Tbsp. each of cocoa, butter & sugar, stirring to combine. Spoon it onto the top of the loaf, and use a skewer to marble it into the batter by pulling it through in a repeated figure 8 pattern (until you are happy with the effect).
* Crush caramel flavored biscuits (like Bakers Nuttikrust) into fine pieces, and sprinkle over the top of the loaf.
Place the loaves on the middle shelf of your oven, and bake for 45 minutes.
Allow to cool, remove from the tins and enjoy!
